In a few words ...
Hand-harvested in 2011 in 3 sortings only of 100% botrytized grapes, on 1.17 ha located on a clayey-sandy hillside on schist and sandstone in the heart of the Butte de chaume. Very slow vinification in vats to preserve aromas and liveliness. Aged on fine lees for 9 months to extract the wine's fatness. 100% chenin. Hand-harvested, botrytized, fermented in temperature-controlled stainless steel vats, regular stirring of the lees, aged on lees, schist soils, granite soils.
