The history of this estate began in 1998, with the cultivation of its vineyards inspired by the principles of organic farming. It was in 2004, when it was acquired by eric albada jelgersma, that cairossa entered the world of quality wine, thanks to the decades of experience this family had acquired with two grands crus classés in margaux, bordeaux, château giscours and château du tertre. Pre-fermentation maceration for 2 to 4 days. Fermentation in 50hl tanks without yeast selection (spontaneous fermentation with indigenous yeasts only). Pumping over or cap punching twice a day for 9 to 12 days, then once a day for 4 to 7 days. Maceration on skins for 20 to 28 days. Malolactic fermentation in barrel. Slight protection by adding sulfites after malolactic fermentation.
