In a few words ...

The grapes are picked at a maximum ripeness of 11° and pressed directly. The first free-run juices are kept. After settling, fermentation begins immediately at a temperature self-regulated at 18°. The traditional method used by the greatest French vineyards requires a minimum of 9 months bottle ageing.
