In a few words ...
The grapes are harvested at precise maturities according to the aromatic freshness of each variety. The musts are kept at 0°C and protected from the air, before being blended and co-fermented together at the end of the harvest. Alcoholic fermentation is stopped by the cold, so the CO2 present in our wine comes naturally from the latter. Finally, the wine is aged on fine lees for 4 months before filtration and bottling, while retaining the natural CO2 that slightly curls on the palate.
