Vineyard management: Facing due east, on a bed of granite, planting and rooting were decisive factors in the vine's development. A density of 7,500 vines per hectare and inter-row grassing help to bury the roots and thus enhance the expression of the terroir. Vinification: Gentle, long pressing to extract clear juice. Clarification of musts by 24-hour settling at low temperatures. Long fermentation with temperature control to protect aromas. Malolactic fermentation and ageing by batonnage for 3/4 months.
