Sustainable viticulture, manual harvesting, whole grapes, fermentation in temperature-controlled stainless steel tanks, pressing, use of selected yeasts, malolactic fermentation, ageing in temperature-controlled stainless steel tanks, blending, light filtration, traditional cork, ageing on laths before disgorging.
