In a few words ...
This variety produces very high quality, fine, delicate, straw-yellow wines with a remarkable bouquet that age very well. It is a late grape variety, harvested between late August and early September. We found a twenty-year-old vineyard north of Béziers, between Saint Chinian and Faugères, producing a very high-quality wine. The harvest undergoes extensive settling. Fermentation in stainless steel tanks lasts around 10 days at a regulated temperature of 18°-19°C. The wine is aged on lees for one to two months.
