Rigorous monitoring by an oenology laboratory. AGEING Aged 11 months in French oak barrels. 10% new barrels, remainder from 1 to 6 wines. Malolactic fermentation with natural indigenous bacteria. Aged on lees and topped up weekly. BOTTLING Gentle fining & filtration, then gravity-fed estate bottling. Selected natural corks.

Aroma
Saint-Romain wines release a fairly strong bouquet white flowers, toasted bread, ripe yellow fruit (mirabelle plum, vine peach) and light honey when sufficiently matured.
