In a few words ...

RAW MATERIALS 100% pure fermented grape juice 100% CHARDONNAY, Average age of vines ~15 years Soil Clayey colluvium on limestone GROWING TECHNIQUES Low vine density, 10,000 vines/ha. No irrigation, no pesticides, no herbicides. Soil cultivation: ridging, ploughing, clawing. Yield regulation by disbudding. HARVESTING Hand-picked. Sorting on the vine and in the winery. 50% de-stemming, light crushing. VINIFICATION Long alcoholic fermentation in barrel. Temperature control. Alcoholic fermentation with natural indigenous yeasts. Rigorous monitoring by an oenology laboratory. AGEING Aged 11 months in French oak barrels. 10% new barrels, remainder from 1 to 6 wines. Malolactic fermentation with natural indigenous bacteria. Aged on lees and topped up weekly. BOTTLING Gentle fining & filtration, then gravity-fed estate bottling. Selected natural corks.

A pale yellow hue dressed in green

Aroma

Saint-Romain wines release a fairly strong bouquet white flowers, toasted bread, ripe yellow fruit (mirabelle plum, vine peach) and light honey when sufficiently matured.
