    RAW MATERIALS 100% pure fermented grape juice 100% CHARDONNAY Average age of vines ~40 years Clay soil on marl GROWING TECHNIQUES Low vine density 10,000 vines/ha. No irrigation, no pesticides, no herbicides Soil tillage: ridging, ploughing, clawing. Yield regulation by disbudding. HARVESTING Hand-picked. Sorting in the vineyard and winery. 50% de-stemming, light crushing. VINIFICATION Long alcoholic fermentation in barrel. Temperature control. Alcoholic fermentation with natural indigenous yeasts. Rigorous monitoring by an oenology laboratory. AGEING Aged for 12 months in French oak barrels. 10% new barrels, 90% barrels that have aged from 1 to 6 wines Malolactic fermentation with natural indigenous bacteria Maturation on lees and weekly topping-up. BOTTLING Glue & gentle filtration, then gravity-fed estate bottling. Selected natural corks. STORAGE AND SERVING ADVICE For this full-bodied, fragrant wine, cold would be an enemy. Serving at cellar temperature (12-14°) is ideal. Sudden chilling can lead to benign crystallization. After 5 years, it is normal for a deposit to appear at the bottom of the bottle.

    Appearance

    Pale yellow hue dressed in green.

    Aroma

    When sufficiently matured, Saint-Romain wines release a strong bouquet of white flowers, toasted bread, ripe yellow fruit (mirabelle plum, vine peach) and light honey.
