In a few words ...
A wine with great ageing potential. As soon as they arrive in the cellar, "little hands" place the bunches selected in the vineyard on a vibrating table, where a second, very rigorous sorting is carried out. The stalks add a little more aromatic complexity, while facilitating the evacuation of the juices. The must is lightly settled, then vinified in 40-hl oak tuns that have contained one vintage. Aging lasts 8 months.
