In a few words ...
For this cuvée, we select plots located on a very chalky terroir of Portland and Oxfordian marls (Caillottes). The soils are very hard to work, and quite cruel to plows! That's why one day a winemaker asked me what I had in mind to try and work these soils. The answer was clear: it's a godsend to have this terroir, so we might as well take good care of it! The entire harvest is carefully sorted by hand. Native yeasts take care of the temperature-controlled alcoholic fermentation. After fermentation, the wine is aged on its lees for 12 months, still in underground tanks to avoid thermal shock and other vibrations.
