In a few words ...
Harvested at maturity, when the balance between freshness and aroma is optimal for rosé production, at sunrise, the coolest time of the day, to preserve their greatest aromatic potential, our Grenaches Gris are harvested and vinified with a minimum of inputs. Pressing after skin maceration and cold settling. Aged on lees with regular stirring of the lees. Early bottling (spring) to preserve aromas and maximum freshness.
