This Pinot Noir is grown on high-altitude plots where the grapes benefit from cool temperatures at night and sunshine during the day. Crushed and destemmed, the grapes are placed in open stainless steel tanks. Maceration lasts a fortnight, with some de-stemming and one or two punchings of the cap. Fermentation at a controlled temperature not exceeding 23°C. Pressing in the small press. Aging of 60% in stainless steel tanks at relatively low temperature for 9 months. Malolactic fermentation carried out. The remaining 40% are aged in 3- and 4-year-old barrels for 6 months. Early bottling in May.

Beautiful cherry-red color.
Aroma
Lovely, expressive nose of red fruit. Floral notes of peony and rose with a touch of ginger and cherry.

Taste
Very fresh on the palate, round, with a touch of licorice and gray pepper. Freshness, elegance, finesse, this wine is well-balanced, long and displays a very fine Pinot Noir varietal typicity: "ça pinote!" as we say in Burgundy.
