Vinification takes place in temperature-controlled stainless-steel vats at 25 to 28°C, over a total period of about 15 days, punctuated by numerous pump-overs and delestages to extract maximum color and tannin. to extract maximum color and tannin. The cold maceration process is used on part of the harvest to develop the aromatic freshness of our MERLOT. DOMAINE DES ASPES MERLOT undergoes malolactic fermentation in stainless steel tanks. It is then racked and put into barrels in November (French oak barrels with fine grain and medium toast). Barrel ageing accounts for about half of the cuvée. The other half is aged in stainless steel tanks. Barrel ageing : - 50% one-wine barrels, - 50% 2-wine barrels. Aging lasts approximately 10 months for this vintage. The wine is then removed from the barrels and homogeneously blended before bottling.
