Appellation Saint-Aubin

The Saint-Aubin AOC, a Premier Cru terroir


The Saint-Aubin appellation is located in the vineyards of the Côte de Beaune, and can only be produced in the commune of the same name. Due to its immediate proximity to the Grand Cru Montrachet, Saint-Aubin benefits from a terroir that is conducive to the production of great wines. In fact, no less than 30 climats are classified Premier Cru within the appellation, for example Derrière chez Edouard, En Remilly, Les Combes, Sur Gamay...

The pinot noir and chardonnay are the kings of the appellation, as they often are in Burgundy. At Saint-Aubin, it is the chardonnay nevertheless that dominates, covering 80% of the 170 hectares of the AOC. The vines are exposed to a temperate oceanic climate, with some cold temperatures due to the sometimes high altitude. The grape varieties find in the AOC soils that suit them perfectly: white, argilo-limestone soils for the chardonnay, and rather brown clay soils for the pinot noir.

St. Aubin wine tasting


The white wines of the AOC have a golden and luminous colour. The nose diffuses aromas of white flowers, fresh almond, orange blossom and fern. Mineral scents also reveal themselves with flint. With the years, the wine offers scents of honey, marzipan and cinnamon. The palate is firm, full, fat, it is a very refined wine.

To accompany this great white wine, choose shellfish or firm-fleshed fish such as monkfish. Poultry is also welcome. For cheese, Beaufort, Comté and sheep's cheese are ideal.

The red Saint-Aubin wines have a dark garnet colour. The nose reveals scents of red and black fruits with blackcurrant, morello cherry and blackberry. There are also spices, mocha, and undergrowth. On the palate, Saint-Aubin offers fleshy, fat, silky wines, with a nice vivacity. They will become warmer with time.

With this red wine, beef, pork and glazed poultry are great matches. Blue cheeses are also a good match.
