Appellation Chablis Grand Cru

AOC Chablis Grand Cru, the sublime expression of Chardonnay

The Chablis Grand Cru appellation covers 100 hectares on the right bank of the Serein, in the commune of Chablis, and the villages of Poinchy and Fyé. The name of the climate from which the wine is made can complete the AOC. Indeed, 7 climats give rise to Chablis Grand Cru: Blanchot, Les Clos, Bougros, Grenouilles, Preuses, Valmur, and Vaudésir.

The chardonnay, the appellation's unique grape variety, flourishes in a semi-continental climate, and on chalky and marly soils mainly. This terroir thus produces white wines of remarkable finesse and balance.

Tasting Chablis Grand Cru

Chablis Grand Cru offers a golden coat, crossed with light green reflections. After a few years, this one becomes light yellow. The nose reveals mineral gragrances of flint and gunflint, as well as notes of lime, honey, dried fruits, notably almond. On the palate, it is a wonderful balance, between fat and acidity, lively and dry. The persistence is also exceptional. After a few years of cellaring, the Chablis Grand Cru develops some aromas of honey and yellow flowers. This wine can effectively be kept for 10 to 15 years.

Chablis Grand Cru are exceptional wines, so they should be accompanied by delicate dishes. With foie gras, oysters, lobsters, crayfish or crayfish, the match is sublime. These Grands Crus also go wonderfully well with creamy fish, sushi, white meats and fresh goat's cheese.
