Appellation Saint-Bris

The Saint-Bris AOC, the only Burgundian grower of Sauvignon

The Saint-Bris appellation is at the heart of the Auxerrois vineyard. It covers 160 hectares spread over the communes of Saint-Bris-le-Vineux, Chitry, Quenne, Irancy and Vincelottes. Until 2003, the appellation was known as Sauvignon de Saint-Bris.

Indeed, the grape varieties used in the AOC are Sauvignon and Sauvignon gris. It is an exception, since it is the only appellation to grow Sauvignon in Burgundy. This one however adapts well to the terroir of Saint-Bris. The climate is temperate oceanic, and the soils are limestone marl.

Expressions of Sauvignon in the Saint-Brise AOC

The white wines of the appellation have a straw colour, very clear. The nose offers citrus scents, particularly tangerine. There is a fruity side, with peach and exotic, with litchi. The finish is quite spicy. With time, the Saint-Bris develops notes of cooked or candied fruit. The palate is consistent with the nose, fruity, full and floral, it finishes with a nice iodine note.

The white Saint-Bris, with its liveliness and freshness, is the ally of oysters and other shellfish, as well as fish, even cooked in curry. It can be drunk with goat cheese and spinach lasagne, or simply with goat cheese.
