Appellation Savigny ou Savigny-lès-Beaune

The Savigny-les-Beaune AOC, rich in Premier Cru


The Savigny-lès-Beaune appellation is located in the vineyards of the Côte-de-Beaune, near Pernand-Vergelesses. Between the mountain of Corton and the commune of Beaune, the AOC is outlined between the forests of the region and the Rhoin river.

The vineyards were the property of the Dukes of Burgundy, and were long maintained by the abbeys of the region. Their work thus created a land of excellence. Indeed, no less than 22 climats in the appellation are classified as Premier Cru, including Les Rouvrettes, La Dominode, Les Talmettes or even Aux Fourneaux.

The appellation covers more than 350 hectares, of which 310 are reserved for pinot noir, the flagship grape variety of Burgundy used in the production of red wines. The Chardonnay used to make white wines covers a smaller area but is nevertheless adapted to the climatic conditions of the vineyard.

The AOC benefits from an oceanic climate, with some continental influences: the sunshine is very satisfactory for viticulture, and regular rainfall provides the necessary humidity for the vines.

Furthermore, the soils of the appellation are argilo-calcareous or sandy.

The tasting of AOC Savigny-lès-Beaune wines


The red Savigny has a cherry red coat, sometimes reaching garnet. The nose diffuses scents of red and black fruits such as cherry, raspberry or blackcurrant, and one can also detect violet. The palate has light tannins and is very fruity.

This red wine forms a fine pairing with red meats, roasted poultry, rillettes or cheeses such as tomme or Mont d'Or, a regional cheese.

The white wines of this appellation have a golden or straw-coloured coat. The nose is quite floral, offering aromas of butter, brioche, fresh almond and citrus fruits as well, such as lemon or grapefruit. The palate is lively, clean, slightly spicy, and becomes fat with age.

AOC Savigny blanc is a perfect accompaniment to Burgundy snails, fish, cooked or raw, and also cheeses such as Comté, Gruyere or Gouda.
